Happy National Pralines Day. Not sure who came up with this national holiday but it's a sweet one. Here's a recipe for Dark Sugar Pralines, darker than most because of the brown sugar, but creamy as well. It's from "Cooking in Cajun Country," a cookbook-travelogue by my twin Chere Dastugue Coen and "Cajun" Carl Breaux of Lafayette, Louisiana. It's out of print now, but still available as an ebook. Note: When making pralines, remember that humidity will affect the consistency.
Lafayette, Louisiana, was named the Happiest Town in America by the Washington Post's MarketWatch.com, and when you look back a few years you might wonder why; we've had a few tragedies to deal with. But maybe that's the beauty of this town. We reach out and hug each other in times of despair. We pull together and get the job done. We pray. A few summers ago my son's best friend disappeared one night while riding her bicycle home. Josh and his friends instantly plastered soci
Several historic structures have been moved and settled along the Vermilion River in Lafayette to make up Vermilionville, the Cajun and Creole Folklife and Heritage Park that represents the lifestyle of Acadian settlers from 1765 to 1890. Visitors will walk through these doors and be transported back in time as they make their way around the extensive property, enjoying Cajuns and Creoles speaking French in period costume while making age-old crafts. This is one of my favorite Louisiana dishes to cook, although the photo above was my version in which I left the vegetables a bit chunky (I'm a bit lazy when it comes to cooking). You can certainly do the same and chop yours smaller for a finer culinary experience. We always use shrimp fresh out of the Gulf — notice how big those babies are? We purchased them in Delcambre, Louisiana, and served the whole meal over Louisiana rice. Bon appetit! Shrimp Creole 4 tablespoons butte
In 2014 Lafayette, Louisiana, was named the Happiest City in America by the Wall Street Journal's Marketwatch.com. I wasn't surprised. My town is filled with people who love to dance, enjoy our excellent cuisine and, as we say in French, laissez les bons temps roulez or pass a good time, chèr. We are happy and we know it. Needless to say, I love living here. You'll also find this joie de vivre in my Cajun novels. #lafayette #lafayettetravel #cajun #joiedevivre #acadian #acadi
